Slow-Cooked Smoked Greens
The secret's the smoked turkey, baby - all that flavor, none of the salt-shaker drama.

Ingredients
- 2 large bunches collard greens, washed and chopped
- 1 smoked turkey wing or leg (about 1 lb)
- 1 yellow onion, chopped
- 5 garlic cloves, smashed
- 6 cups water or low-sodium broth
- 1 tsp red pepper flakes (optional)
- 2 tbsp apple cider vinegar
- Black pepper to taste
How to make it

Add smoked turkey, onion, garlic, and water to a big pot. Bring to a boil, then drop to a low simmer for 45 minutes to build that broth.

Pull the turkey out, shred the meat off the bone, and slide it back in the pot.

Add the greens in batches, letting each handful wilt before adding the next.

Simmer low and slow for 30-45 minutes until greens are silky and tender.

Stir in vinegar and pepper. Taste - you shouldn't need salt, the turkey handled that.

Serve with a splash of hot sauce and cornbread for sopping.
